• An easy way to preserve spring greens

    Parsley and Pepita Pesto

    Pestos are great little preserves with a wide variety of uses. Simply add to pasta, on sourdough toast, in sandwiches, with cheese and crackers...

Ingredients:
2 Bunches of Parsley
3/4 Cup Pepitas
3/4 Cup Extra Virgin Olive Oil
5 TBS Nutritional Yeast
1-2 Garlic Cloves
Handfull of Rocket
Handfull of Sunflower Seeds
10-15 TBS of Apple Cider Vinegar
A couple of good dashes of Pink Salt

Directions:
Place all ingredients in a food processor and process for approximately 5 minutes. You will have to turn the machine off periodically and push the mixture down.
Serve on top of roast veg, Baked Potato or your favourite vegetable tray bake.
